Sooooo…I spent five hours making tamales yesterday and half of them turned out disgusting, like eating metal covered in corn. After a series of taste tests and detectuve work, we realized that I added too much baking soda to one batch. Actually to both batches but the second batch of dough dried out before I could use it so I added more maseca and broth…thank goodness!
So, all you who use baking soda in tamales (or any cooking), I say to you, beware! You are only a few spoonfuls away from the grossest thing you’ve ever eaten!
